The best thing about these is that kids absolutely looooovvveee them. First of all, I’ve yet to meet a kid that didn’t like meatballs period. But these are so delicious and flavorful, your kids will gobble them up and then ask for more.

- 1 Pound of Ground Chicken
- 1 Lemon
- Onion Powder
- Dried Dill
- Dried Oregano
- Garlic Powder
- Salt
- Box Grater or Microplane
- Large Bowl
- Large Baking Sheet
- Parchment Paper
Tips
- Make sure your dried herbs are fresh. Dried herbs can lose flavor quickly so if your dried herbs are old you might not get as flavorful an end product.
- You can easily form meatballs with a 1 tablespoon cookie scoop. Using a cookie scoop ensures your meatballs are all the same size which helps them cook evenly. Once you scoop them out, simply roll them quickly in your hands to smooth out the rough edges.
- You can easily double this recipe and use the leftovers for easy lunches for the rest of the week.
- These meatballs can be stored in a covered container in the refrigerator for 4 days or in a freezer bag in the freezer for 6 months.
- These meatballs are gluten- and dairy-free and Whole30, Paleo, and keto-friendly.

- Large Bowl
- Box Grater or Microplane
- Large Baking Sheet
- Parchment Paper
Ingredients
- 1 Pound Ground Chicken
- 1 Teaspoon Onion Powder
- 1 Teaspoon Dried Dill
- 1 Teaspoon Dried Oregano
- ½ Teaspoon Garlic Powder
- ½ Teaspoon Salt
- Grated Zest of One Lemon
Instructions
- Preheat oven to 425°. Line a large baking sheet with parchment paper.
- Add all ingredients to a large bowl and mix well.
- Form meatballs with 1 tablespoon of the chicken mixture and place them evenly on the parchment lined baking sheet.
- Bake in the pre-heated oven for 15 minutes or until fully cooked and 160° internally.
